Wobbly egg custards are good but I eat them sometimes from the sandwich shop. Balenced mouthfulls over the aluminium tin when sat back at my desk do generally make me think something is going to wibble in the wrong way and splat everywhere on my keyboard! So I think there may be something in favour of a more robust structure, especially for those occasions when one does not have acess to a cake fork. And also, thin custards are the work of the mass bakery, something should be different about home baked. And I bet there is less of a risk of soggy pastry with a more solid filling. So I think these sound like The Business (as I would expect) x
